Soy Milk is a healthy alternative for cows milk and is super easy to make at home. All you need is two ingredients: Soy beans and water! Soy Milk is rich in protein, low in saturated fat, cholesterol free and is very similar to cows milk in terms of consistency.
When using store-bought soy milk, you will often find unnecessary additives, thickeners and preservatives. So why not try and make it at home? The recipe below is for 2 litres of Soy Milk:
Ingredients:
200g of yellow soybeans
2 litres of filtered water
Method:
Rinse the soybeans
Soak the soybeans in water (the water should be 5 times their volume) overnight (8 hours in summer and 10 hours in winter).
When they are well soaked, they should open easily
Drain the soybeans and rinse them very well few times
Use a large pot and boil 1.25 litres of filtered water
During this time, blend the beans with 0.5 litres of filtered water
Pour this mixture into the pot and reduce heat
Rinse the blender with the remaining water and pour that water into the pot as well
Heat at low heat, stir and skim foam
Continue cooking for another 20 min
Strain the blended mixture using a nut milk bag, a cheesecloth, a napkin or a fine mesh strainer
Soya milk can be stored for 3 days in your fridge.
Soy milk can be used to make tofu. The pulp is called okra and can be used in your pastries (it must be cooked before eaten). Try making soy milk at home, be kind to your body and our planet.
